Blendtec Recipe of the Week: Velvety Spinach Soup‏

VELVETY SPINACH SOUP

This soup is a simple way to add vegetables to your diet.

INGREDIENTS

FourSide Jar
or 
WildSide Jar

1/2 tspolive oil
1 tbsponion, chopped
4 cfresh spinach
1 cvegetable broth
1/2 ccooked great northern white beans
1/8 tspblack pepper, ground
1/8 tspcurry powder

INSTRUCTIONS

Heat oil in medium saucepan, add onion, and sauté until tender. Add spinach; cover pan with lid and cook until spinach is wilted. Add all ingredients to WildSide or FourSide jar and secure lid. Select “Soup.”

VARIATIONS

For a raw soup recipe, omit the oil and use water instead of vegetable broth. Use soaked beans instead of cooked beans.
