Filipino Recipe: Leche Flann

Ingredients
1 16-oz can of condensed milk
1 16-oz can of evaporated milk
1 cup of sugar
1 tbsp of vanilla
6 egg yolks

Note - you can use regular milk if you are in a pinch and don't have evaporated milk

Procedure:

1.) Separate the egg yolks and egg whites. put the egg yolk in a deep bowl and whisk it until it
blends. You will not be using the egg whites for this recipe

2.) Mix the condensed milk, evaporated milk and vanilla in the eggyolk then slowly whisk it
until it blends, then set aside.

Make caramelized sugar:

3) Heat a pot to medium and put the white sugar in the pot. Add a little bit of water to the sugar. Cook the sugar until it is melted. mix it occassionally and keep in eye to it so it wont burn. Stir the mixture until it reaches a boil. Swirl the pan around to keep the syrup moving until it begins to turn amber brown. When the caramelized sugar is finished pour it into a cooking pan. Let the caramilized sugar set for about ten minutes, so it can cool off a bit.

4) Pix egg, condensed milk, evapprated milk and vanilla mixture in the same baking pan as your caramilized sugar.

5) preheat oven to 400 degrees F

6) Place the pan in the preheated (400F) oven for about 30-35 minutes. Check it with a toothpick to see if it is done. If the toothpick comes out clean, it is done. Take the Leche Flann out of the oven and let it cool. After it cools, put foil on top of the pan and cool it more in the refrigerator. In about four hours, the Leche Flann wil set and will be ready to eat.

7) Leche Flann is a Filipino desert- it is sweet and it is delicious
