Savory Vegetable Beef Soup

6 servings  |  Prep Time: 10 minutes  |  Cook Time: 20 minutes


1¾ cups Swanson® Beef Broth (Regular or 50% Less Sodium)
2  medium potatoes, cut into cubes (about 2 cups)
1  cup cubed cooked beef
3  cups V8® 100% vegetable juice
1  cup Muir Glen® canned whole peeled tomatoes
1  bag (16 oz.) Green Giant® Valley Fresh Steamers® Garden
    Vegetable Medley
1/4  tsp. dried thyme leaves, crushed
1/8  tsp. ground black pepper


Heat the Swanson® broth and potatoes in a 4-quart saucepan over
medium-high heat to a boil. Reduce the heat to low. Cover and cook
for 5 minutes or until the potatoes are tender. Stir the beef, V8®
vegetable juice, Muir Glen® tomatoes, Green Giant® Valley Fresh
Steamers® vegetables, thyme and black pepper in the saucepan.
Cover and cook for 15 minutes or until the vegetables are tender.
