Easy Mid-Week Dinner





Weeknight Roast Chicken with Spring Vegetables

This one-pan meal is a true weeknight wonder. Let the chicken roast for 15 minutes while you chop potatoes, radishes and scallions. Then add the veggies and return the pan to the oven for 20 more minutes, and dinner is ready! How easy and quick is that?
See it is very easy to cook fresh and healthy meals at home during the busy and hectic workweek.
Always try to use fresh herbs and spices,any garden or home improvement stores carry a wide variety of container gardens you can even grow on a sunny window sill.Even get the kids involved it will teach them about sustainable gardening.An old proverb goes  like "you are never more alive then when in the garden"
