Easy Asparagus Pasta Salad


Well today I came home to a fridge drawer full of fresh veggie and fresh herbs... Thanks to my favorite sister in law. She has awesome connections.So one of these veggies was Asparagus. What will i do with all this asparagus??? So I was thinking i love pasta salad one of my favorites and i believe the more veggies the better. So i thought why not share this recipe with all of you.

Asparagus Pasta Salad recipe


Ingredients:

1 cup uncooked small shell pasta or any other pasta
1 ½ cups chopped fresh asparagus
1 11.6 oz jar Giardiniera with liquid
prepared Italian dressing to taste
½ cup diced red onion
1 teaspoon fresh oregano leaves
Salt and black pepper, to taste

Directions:

  1. Bring a large pot of salted water to a boil. Add asparagus and cook until just turns bright green, 2 to 3 minutes. Remove, drain, and rinse under cold water. Set aside. Cook pasta in a large pot of salted water according to directions, 7 to 10 minutes. Drain and place in a large bowl.
  2. Add remaining ingredients, toss well to coat, and season with salt and pepper. Chill for 2 to 4 hours for flavors to develop. Serve cold or at room temperature.
