- 3/4 cup almond meal/flour
- 1 and 3/4 cups mozzarella cheese, shredded
- 2 tablespoons cream cheese
- 1 egg
- pinch of salt
- 1/2 teaspoon Italian seasoning
Directions
- Step 1:
Combine almond flour and mozzarella cheese in a microwave safe bowl. Add in cream cheese and cook for one minute. Stir, and cook for additional 30 seconds in microwave.
- Step 2:
Mix in egg, salt, and Italian seasoning, and stir.
- Step 3:
Shape dough into a ball and place between two pieces of parchment paper.
- Step 4:
Use a rolling pin on top of parchment paper to roll dough in a circular shape.
- Step 5:
Remove the top parchment paper and slide dough onto a baking sheet. Bake at 425 degrees in the oven for 12-14 minutes until slightly browned.
- Step 6:
- 1 pound ground beef
- 1 pound ground Italian sausage
- 24 ounce jar Marinara Sauce we used plain sauce bought at Sams Club, their brand
- 8 ounces cottage cheese
- 1 egg
- 2 tablespoons fresh basil, chopped
- 2 cups Italian Blend Cheese, shredded (or 1 cup mozzarella and 1 cup Parmesan, combined)
- additional fresh basil for garnish, optional
Directions
- Step 1:
Roll prepared "Fathead" dough very thinly on a baking sheet covered in parchment paper. Bake for 12-14 minutes at 400 degrees until slightly brown. Cut into long lasagna "noodles", and set aside.
we used pepperoni instead of Italian Sausage
- Step 3:
Add both ground beef and sausage. Crumble and cook meat in the skillet.
- Step 4:
Stir in marinara sauce.
- Step 5:
In a small separate bowl stir cottage cheese, egg, and basil together.
- Step 6:
Start compiling lasagna in a 9x13 casserole dish by adding sauce to the bottom, followed by a layer of cottage cheese mixture, shredded cheese and then the "noodles".
- Step 7:
Repeat and then end with a layer of sauce and shredded cheese.
- Step 8:
Bake covered with foil for 25 minutes on 375 degrees. Bake another 10 minutes uncovered. (Tip: Spray foil with non-stick spray FIRST to avoid the foil from sticking to the cheese while baking.)
- Step 9:
Serve with additional chopped basil, if desired.
what we learned. My daughter added extra cheese when we made this which wasn't needed. We weren't aware that the noodles would melt into the lasagna and turn into cheese. My daughter said this had too much cheese, my wife said this was good, but regular lasagna is better. My son loved this and finished it off. I liked it, but it did have a touch too much cheese. Nearly as good as regular lasagna.
