Bock Beer Macaroni and Cheese

I do not often make baked macaroni and cheese, preferring my quick and easy stove top recipe. Mainly I like a high sauce to pasta ratio and, at least in my experience, mac and cheese
 is less creamy once subjected to nearly an hour in the oven.  well i found this recipe and im
going to try it.
started with what flavors I wanted in my dish. That got me thinking of other cheese dishes I love and beer cheese soup came to mind. When paring beer with cheese I prefer bock beers. The malty flavor of bock beer is a nice contrast to rich, sharp cheeses. Another flavor I wanted was onion. I tried a recipe for macaroni and cheese that included grated onion and, while I disliked the texture, the grated onion had a big impact on the flavor.
To keep the finished product extra creamy I decided to add 4 ounces of cream cheese to the sauce. Cream cheese also helps the sauce from becoming grainy while baking, another mac and cheese pet peeve of mine. The last thing I did was fry up two slices of smoked bacon until they were very crisp and then blitz them into powder in my blender. I added this powder to the panko crumb topping. You could skip that part, but the essence of bacon really takes this dish from ‘super-good’ to ‘over-the-top awesome’. Thick, creamy, and oh-so cheesy, this macaroni and cheese is perfect anytime.

Bock Beer Macaroni and Cheese Serves 8
8 ounces elbow of penne pasta
1 stick butter
2 tablespoons grated yellow onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon mustard powder
1/4 teaspoon cayenne pepper
1/4 cup all-purpose flour
1/2 cup bock, or other amber, beer
1 cup half and half
4 ounces cream cheese, at room temperature
4 ounces (about 1 1/2 cups) extra sharp cheddar cheese, shredded
4 ounces (about 1 1/2 cups) Parmesan cheese, finely shredded, divided
2 ounces (about 3/4 cup) fontina cheese, shredded
2 ounces (about 3/4 cup) smoked provolone cheese, shredded
2 slices thick cut bacon, cooked crisp
1 tablespoon butter, melted
1 cup panko bread crumbs

Heat the oven to 350 F and spray a medium casserole dish with non-stick cooking spray.
Cook the pasta in salted water according to the package directions, reducing the cooking time by one minute. Drain and rinse under cool water to stop the cooking. Set aside.
In a medium sauce pan melt the butter over medium heat until it foams. Add the grated onion, salt,
pepper, mustard powder, and cayenne pepper and cook until fragrant, about one minute
Add the flour and whisk until smooth. Cook, whisking constantly, for two minutes or until the mixture is just lightly golden brown.
Whisking constantly add the beer and half and half and cook until the mixture is smooth. Let the sauce come to a simmer and thicken. Add the cream cheese and whisk until completely smooth.
Turn the heat down to low and, in three batches, add the cheddar cheese, half the Parmesan, fontina, and provolone. Once smooth turn off the heat and fold in the cooked pasta. Transfer the mixture to the prepared casserole dish and top with the reserved Parmesan cheese.
Put the crisp bacon strips in a blender and process until the bacon is finely ground. Combine the bacon powder in a medium bowl along with the melted butter and panko bread crumbs. Toss until the mixture is well combined. Spread the mixture evenly over the macaroni. Bake for 40 to 45 minutes, or until the topping is golden brown and the mixture is just starting to bubble at the edges. Cool for ten minutes before serving.

A Family Recipe: Baked Mushrooms

Ingredients
4 boneless chicken breast
1/4 cup all purpose flour
3 tablespoon butter
1 cup sliced fresh mushroom
1/2 cup chicken broth
A dash of salt and pepper
1/3 cup shredded monzarella cheese
Coat the chicken with flour. Fry the chicken in the butter for 10 minutes on each side or until golden brown. Then put the chicken in the baking pan. Don't forget to spray or put butter or oil in the baking pan. In the same pan that you use to in fry the chicken, sautee the mushroom, season it with salt and pepper. Add the chicken broth. Let it boil for 10 minutes. Then pour the chicken broth and mushroom into the baking pan where you put the fried chicken. Sprinkle the monzarella cheese on top of the chicken. Bake it for 30 minutes in 375 degree oven. This is very Good and very easy to Make. Serve it to your family and friends and make them happy.

Review S&S Brand Spices

The S&S Brand Company sent me two small packets of their spices. A BBQ Spice Rub and a Peppercorn Rub. Good thing for the company it does not take too much of their spice to get a taste of their product.Their spices are full of flavor and go a long way. The spices taste good when you cook meat on the grill and give the meat a ton of flavor.

The S&S Brand Company began in San Francisco where two chefs met and created their company. The cool thing about their site is they have recipes where you can use their spices. The boast 3 BBQ sauces and six spice rubs. I wished I has a small sample of each, but the spices I received showed me they have very quality products. The company seems to be pretty new and are beginning to make their stand in the San Francisco area.

Another good thing about the S&S Brand Company is their spices are full of flavor and are not overly priced. You can get a 2 ounce jar of one of their spice rubs for $7.00. Trust me, their spices will go a long way and will enhance the flavor of your food. Check out their site, but one of their spices and try out their free recipes. Besides the spice rubs, the have 12 ounce jars of their BBQ rubs for $8.00 which I have not tried, but I believe they would be just as tasty as their spices. Their recipes take one to two tablespoons of their spice rub. I received enough of two spices to make about five recipes.

Filipino Recipe: Leche Flann

Ingredients
1 16-oz can of condensed milk
1 16-oz can of evaporated milk
1 cup of sugar
1 tbsp of vanilla
6 egg yolks

Note - you can use regular milk if you are in a pinch and don't have evaporated milk

Procedure:

1.) Separate the egg yolks and egg whites. put the egg yolk in a deep bowl and whisk it until it
blends. You will not be using the egg whites for this recipe

2.) Mix the condensed milk, evaporated milk and vanilla in the eggyolk then slowly whisk it
until it blends, then set aside.

Make caramelized sugar:

3) Heat a pot to medium and put the white sugar in the pot. Add a little bit of water to the sugar. Cook the sugar until it is melted. mix it occassionally and keep in eye to it so it wont burn. Stir the mixture until it reaches a boil. Swirl the pan around to keep the syrup moving until it begins to turn amber brown. When the caramelized sugar is finished pour it into a cooking pan. Let the caramilized sugar set for about ten minutes, so it can cool off a bit.

4) Pix egg, condensed milk, evapprated milk and vanilla mixture in the same baking pan as your caramilized sugar.

5) preheat oven to 400 degrees F

6) Place the pan in the preheated (400F) oven for about 30-35 minutes. Check it with a toothpick to see if it is done. If the toothpick comes out clean, it is done. Take the Leche Flann out of the oven and let it cool. After it cools, put foil on top of the pan and cool it more in the refrigerator. In about four hours, the Leche Flann wil set and will be ready to eat.

7) Leche Flann is a Filipino desert- it is sweet and it is delicious

How To Make General TSO's Chicken

I love General TSO's Chicken. I do not know who he is or if the general is a person, but I love his chicken. General TSO's chicken is a Chinese food you will find at many Chinese restaurants. Each Chinese restaurant have their own variation. These variations can go from slightly spicy to extremely spicy. I like my General TSO's chicken somewhere in the middle. Check out the recipe.
Things You Will Need
• A deep fryer or a pan (Wok)
• Vegetable oil
• 1lb. of boneless skinless chicken. Chicken breast is preferred (cut into small chunks)
• 5 dried chili peppers
• 3 green onions (sliced)
• 3 eggs (beaten)
• ½ cup of corn starch
• 4 tablespoons of rice vinegar
• 5 tablespoons of rice wine
• 3 tablespoons of sugar
• 3 tablespoons soy sauce
• 2 teaspoons of cornstarch
• Olive oil
• White rice
1. Buy the ingredients for General TSO's chicken. You can buy most of the ingredients at the supermarket. You can find chili peppers, rice vinegar, and rice wine at a Chinese store. You may also buy a Wok at your local Chinese store. If you cannot find a Chinese store (in your area) look it up in the Yellow Pages.
2. Cook the chicken and cut it into small pieces. General TSO's chicken at your local Chinese is cut in small pieces. If you like larger pieces, cut them the way you prefer.
3. In a large mixing bowl combine ½ cup of cornstarch and three beaten eggs. Mix well to create a batter. Add the chicken bits and coat thoroughly.
4. Heat the deep fryer or Wok to 375 degrees. Deep fry chicken bit in batches. When one batch is done, dry the grease off on a paper towel. Continue this process until you have cooked all of the chicken pieces. You are getting closer to enjoying your own home cooked General TSO's chicken. Can you taste it yet?
5. To make the sauce for your General TSO's chicken-In a small bowl combine rice vinegar, rice wine, soy sauce, and sugar. Wait on the cornstarch for a minute. Decide how thick or thin you want your sauce for the General TSO's chicken. Some people will not use the cornstarch. Other people will use the cornstarch to thicken up the sauce. Do what you prefer.
6. Get your Wok ready for cooking. Add one to two tablespoons of olive oil to your Wok. Add dried chili peppers to your Wok and stir fry for thirty seconds. This is where you decide how spicy you want your General TSO's chicken. Add more chili peppers for spicier chicken, less for not so spicy chicken.
7. Get your rice cooker ready. Put some white rice in the rice cooker and put it on cook. If you don't have a rice cooker (unlucky you) cook your rice in a pan. You will need rice to fully enjoy your General TSO's chicken.
8. Add the chicken bits to the Wok and stir fry for a couple of minutes
9. Add the sauce to the mixture and stir fry. If you used cornstarch, you will have to lower the heat. If you don't, the sauce will thicken too fast, and become a sticky mess. Cook on low heat until the General TSO's chicken is done. You will know this by the thickening sauce or the sauce coming to a boil. Again, this is determined by the use or cornstarch.
10. Take your onions and cut them up, use them as a garnish on your General TSO's chicken. Put the General TSO's chicken over your white rice and enjoy. This recipe should feed three to four hungry people.
Tips
• The amount of chili peppers will determine the spiciness of the meal
• Sauce with corn starch will cook too quickly if the Wok is too hot
• Buy a rice cooker
• Buy a Wok
• You can have more sauce by doubling the sauce ingredients
