Pancit Authentic Filipino Recipe

My wife is Filipino and this is one of the recipes I love, there are many Filipino dishes I cannot eat, but I love Pancit. The pics do not have the shrimp, but you can use either option w/ or w/out shrimp.

Ingredients

  • 1 (8 ounce) package thin rice noodles
  • 1/2 pound skinless, boneless chicken legs, cut into bite-size pieces
  • 1/2 pound pork tenderloin, cut into bite-size pieces
  • 1/2 cup soy sauce
  • ground black pepper to taste
  • 1/2 medium head cabbage, shredded
  • 2 carrots, shredded
  • 2 green onions, chopped into 1 inch pieces
  • 1/2 pound shrimp, peeled and deveined

Directions

  1. Place the rice noodles in a large bowl, and cover with warm water. When soft, cut into 4 inch lengths, drain, and set aside.
  2. In a skillet over medium heat, brown the chicken and pork until no pink shows. Season with soy sauce and pepper. Remove from skillet and set aside. Saute the cabbage and carrots until tender. Stir in the noodles, green onions and shrimp. Cook for 4 to 5 minutes, stir in the chicken and pork, and cook for 5 more minutes.

Living The Dream In California

I enjoy vacationing in California. It is a nice state with plenty of cool places to check out. We love to visit our friends in Burbank and Oakland and spend the day at the beach. California has great weather and plenty of things to do. We have a friend who is a big wig in a large company near Burbank. He offered my wife a job as an accountant in his company. She wanted to check out some houses in the area and we found ourselves on Sunset Boulevard.

My wife is a dreamer, she loves large houses. We decided to check out some houses for sale in beverly hills. She always wanted to live in California for many reasons. Some of her closest friends live in California, the trip to the Philippines is much easier from California than Florida and there are plenty of Filipino stores where she could shop. We checked out some of the houses for sale and looked into a few. My wife loved the biggest, the best and of course the most expensive.

We haven't made a decision on the job offer yet. We like Florida and we also like California. I believe I would rather live in California, but we all know the grass is always greener on the other side of the street. I enjoyed the house hunting in California. It was fun to check out some really nice houses. I can't wait to go back.

Filipino Recipe: Leche Flann

Ingredients
1 16-oz can of condensed milk
1 16-oz can of evaporated milk
1 cup of sugar
1 tbsp of vanilla
6 egg yolks

Note - you can use regular milk if you are in a pinch and don't have evaporated milk

Procedure:

1.) Separate the egg yolks and egg whites. put the egg yolk in a deep bowl and whisk it until it
blends. You will not be using the egg whites for this recipe

2.) Mix the condensed milk, evaporated milk and vanilla in the eggyolk then slowly whisk it
until it blends, then set aside.

Make caramelized sugar:

3) Heat a pot to medium and put the white sugar in the pot. Add a little bit of water to the sugar. Cook the sugar until it is melted. mix it occassionally and keep in eye to it so it wont burn. Stir the mixture until it reaches a boil. Swirl the pan around to keep the syrup moving until it begins to turn amber brown. When the caramelized sugar is finished pour it into a cooking pan. Let the caramilized sugar set for about ten minutes, so it can cool off a bit.

4) Pix egg, condensed milk, evapprated milk and vanilla mixture in the same baking pan as your caramilized sugar.

5) preheat oven to 400 degrees F

6) Place the pan in the preheated (400F) oven for about 30-35 minutes. Check it with a toothpick to see if it is done. If the toothpick comes out clean, it is done. Take the Leche Flann out of the oven and let it cool. After it cools, put foil on top of the pan and cool it more in the refrigerator. In about four hours, the Leche Flann wil set and will be ready to eat.

7) Leche Flann is a Filipino desert- it is sweet and it is delicious
